Mother's Day Menu - Heating Instructions

Thank you for choosing us to provide the catering for your special Mother's Day meal!

Your main dish & side dishes will need to be heated in the oven and accompanying sauce warmed up on the stove top in a saucepan. While your main dish is resting we suggest warming up the bread in the oven for 5-10mins as a nice touch.

The salad and trifle are to be served cold.

 

 

Heating instructions for your chosen main dish:

Salmon Wellington

  1. Remove the Wellington from the fridge 1 hour prior to cooking
  2. Preheat oven to 180°C
  3. Carefully move the Wellington from the foil tray using the parchment paper to lift it out and place it onto a flat baking tray
  4. Place on the middle shelf of the oven and reduce the temperature to 160°C
  5. Bake for 30 - 35mins 
  6. If the Wellington is not fully browned after 35 minutes then increase the temperature to 170°C for a further 5 - 10mins or until the pastry is a rich brown 
  7. Carefully remove Wellington from the oven and let rest for 10mins before carving

For the Sauce:

  1. Empty the sauce into a saucepan and bring to the boil and serve hot

 Chicken Ballotine (GF)

  1. Remove the Ballotine from the fridge 1 hour prior to cooking
  2. Preheat oven to 180°C
  3. Carefully place the Ballotine onto a flat baking tray
  4. Place on the middle shelf of the oven and reduce the temperature to 160°C
  5. Bake for 30 - 35mins and then remove from the oven and carefully drizzle the glaze over the Ballotine and put back in the oven at 180°C for 5 - 10mins
  6. Carefully remove Ballotine from the oven and let rest for 10mins before carving

For the Sauce:

  1. Empty the sauce into a saucepan and bring to the boil and serve hot

Homestyle Porchetta 

  1. Remove the Porchetta from the fridge 1 hour prior to cooking
  2. Preheat oven to 180°C
  3. Carefully place the Porchetta onto a flat baking tray
  4. Place on the middle shelf of the oven and reduce the temperature to 160°C
  5. Bake for 30 - 35mins (until the core temperature is 70°C)
  6. Carefully remove Porchetta from the oven and let rest for 10mins before carving

For the Sauce:

  1. Empty the sauce into a saucepan and bring to the boil and serve hot

 

Heating instructions for all packages:

Medley of Roasted Mediterranean Vegetables (V) (GF) (DF)

Potato, Garlic and Cheese Bake (V) (GF)

  1. Preheat oven to 180°C (can cook this at the same time as your main dish, just ensure the main dish is on the middle shelf and vegetables & potato bake go on the bottom shelf)
  2. Place the confoil tray of vegetables & potato bake in the oven with lid on for 15 - 20mins
  3. Take lid off and cook for another 10mins
